Cannelé which means “fluted” in French is a pastry from Bordeaux, France that has been around for 300 years. It may be a small simple pastry, but it takes a lot of time and precision for our Cannelés to turn out right. We make our custard one day in advance around the same time everyday, and let it sit for up to 12 hours before baking. We bake our cannelés in copper moulds in high temperature to get the outside nicely caramelized with a soft custardy centre.
