When I was living in London back in 2014, I was obsessed with Aussie brunches… I came across this place called Granger & Co. in Nottinghill and tried their ricotta hotcakes and corn fritters.
The ricotta hotcakes came with their honeycomb butter and boom, you know what happened, another food core memory. I would go back just for the hotcakes and butter… and also their corn fritters.
This is my version of they honeycomb butter and it goes with everything - fried chicken and waffles, pancakes, biscuits, scones, and croissants. We pair it with our Hot Cross Buns because the flavours just go so well with each other.
We melt our housemade honeycomb and add it in whipped butter, then we fold in smaller pieces of honeycomb in the butter to give it that extra crunch. We also add it on top. Our honeycomb is a little bit on the darker side when we make them, so it’s not too sweet on the palate and has a slight bitterness to it.
