Our brioche, cookie craquelin, Norohy vanilla diplomat, strawberry puree and syrup, fresh cut strawberries, and garnished with pearl sugar.
For the strawberry puree and syrup, we macerate frozen Ontario strawberries for 3 hours. We then strain the syrup, and puree the rest of the strawberries with a little bit of sugar.
